Since wall drain pipe clears the vanity, I am thinking running 90 degree going up and then attaching the rest to the p-trap. Not sure if this matters. Within the wall, drain pipe doesn’t go straight down. It turns left and goes towards toilet.

You have one decent opportunity to get your sink drainage as good as you possibly can, function over form. Instead of 90’s use 45 degree fittings.
How big is the pipe from the sink to the drain?
It turns out the drain included with the faucet is an 1¼” pipe, which I suppose is pretty standard now. The problem is, my waste/sewer pipe from the wall is a 1½ ” opening, as is my P-trap/J-bend. Obviously when I place the new drain in the P-trap, it just swims in it and I can’t make a watertight connection.

If you find that it leaks after you tighten everything up, and you have water on top of the reducing washer on the tailpiece, it means your drain assembly isn’t watertight against the sink.
